Slow dough, short menu

Why we bake less, and why it tastes better.

Ranek means "morning" in Polish, and ours start at four. The dough has been resting since the day before: flour, water, salt and a starter we have been feeding for years.

We bake a few things and bake them every day. When something runs out, it runs out. That way nothing sits on the shelf overnight, and the bread you take home is the bread we would eat ourselves.

The coffee follows the same idea. One espresso roast, one filter that changes every week, and someone behind the bar who is happy to tell you about both.

“Good bread can't be hurried. Neither should your breakfast.”

  1. Stone-milled flourWhole grains from small Polish mills.
